It was after 10 o’clock last night when I decided to cancel this week’s business trip. When I’m not on the road I work from home, so I was cozy in my slippers when I realized that lunch was going to pose a challenge.
The Gastro Gods looked down upon me as I rediscovered 3 lonely strips of leftover marinated beef and veggies in my fridge. And then– a flash of brilliance– I can repurpose my beef and veggies into beef sliders! (I won’t lie, this flash of brilliance was probably really a flashback to David’s sliders Saturday night at Smith & Wollensky).
All I need is… bread! That I can make without yeast; since I have neither bread nor yeast. Who knew it would be so easy!
Yeast-Free Rolls for One
- 1/2 cup flour
- 1 teaspoon thyme
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/8 teaspoon salt
- 1/8 teaspoon onion powder
- 1/3 cup water
- Preheat oven to 350°F
- Sieve together all dry ingredients
- Add water and mix
- Spoon into two greased muffin cups and bake for 20-25 minutes
These are not the dinner rolls you’re used to. No joke– these rolls taste like pretzels. Pretzel-tasting rolls from inside my oven! Filled with the reheated beef and veggies, these little sliders are not only repurposed, but remarkable!

I would love to be modest about it, but it was totally delicious! There may be variations of these sliders at a later time. The combinations are endless…
